1997 GMC Jimmy Thermostat / Engine Issue

Water comes out of the engine - I've replaced the thermostat on numerous occasions and each time the engine overheats. I've replaced the head gasket 3 times and the radiator 3 times. The water pump and all hoses have been changed and still, each time I've put a thermostat in water comes out through what appears to be the engine. I've run the truck three years now without a thermostat (since the last replacement of the head gasket and radiator) and it has run fine. It recently turned cold, I tried putting a new thermostat in and now, once again I'm faced with the same issue - there is water coming out of the engine and it is overheating. I'm at a loss as to what to do next - I do not want to take it back to the garage for another $400.00 repair bill without knowing exactly what is happening. Thank you. Todd Coyle
